How anonymous is bitcoin really?

I set up a wallet in Electrum. I traveled to a bitcoin atm (one of 7 in my entire city), and it required me to input a phone number for verification.
In my country, you require ID to activate a phone sim card. Often a drivers license number, or Government health card is suffice.
It makes no sense to require verfication if you're literally putting cash into an address, so it's clearly a tracking procedure. Buts that ok, I just wanted to enter the Bitcoin market without the hassle of sending my photo into some on-line service. I did attempt to purchase an "anonymous" prepaid credit card so that I could purchase coins from coinmama, but the credit card retailer asked me for a photo ID, so there really does not appear to be an easy method of entering the market without complete ID.
Ive opened up Electrum, and sure enough, the transaction has been received from the bitcoin ATM, and so Im in the market.
Fine, but at the end of the day, my phone number, and therefore my photo ID (which I used to activate the sim last year), is connected to this initial transaction.
And since the block chain is obviously public, anyone from this point, can follow where those bitcoins go.
But, if the wallet that I sent the coins to from the ATM is "Wallet A", and I create a new wallet (Wallet B), and then send all my coins from Wallet A to Wallet B, technically, there's no way to truly prove that I myself own wallet B.
Is this correct?
Also, do bit coin transactions often record IP addresses from which they are sent?

When I send Bitcoin to a friend I need his wallet address and can check with that adress which transactions he made before... so actually this will reduce the anonymity since the fewest people will create a new adress for each transaction. And can Bitcoin be a daily used currency if the supply is limited and therefore deflationary.
So what is the benefit of Bitcoin then?

I've heard of folks asking for bitcoin in ransomware. If Monero is the private coin, why wouldn't they ask for that? Can you split the transactions up so much that you become untraceable? would a hacker even need Monero? How anonymous is Bitcoin today?

So, I hear everywhere that Bitcoin is not anonymous and there are other coins which are more privacy focused like Monero, ZCash, etc.
But in my opinion, Bitcoin is sufficiently anonymous as it is very difficult to analyse the whole blockchain using machine learning and I am not even sure if someone has done that yet. Also, mixers add a hell lot of complexity for some analysis like that.
Would like to know your opinions :)
